After five years of cafeteria living (at college) and then lazy lunches at my computer (in the apartment), it is time for a new era…
or should I say an old era. It’s packed-lunch time again! As I head off to my first day of classes today, and then to my first day of practicum (hopefully) on Wednesday, I’m forseeing a lot of packed meals and snacks in my future.
Therefore, I’m soliciting a little help! Help keep me from dying of boredom from endless sandwiches. No fridge and no microwave means we need to get creative, people.
What are your favorite lunches and snacks to pack? Help me!

Cold grain salads! Cook a big batch of grains (brown rice, quinoa, wheatberries, whatever) on Sunday night. Cold grains + chopped veggies and/or greens + protein of your choice (diced chicken, hard boiled egg, etc) + healthy salad dressing (sometimes I just pour olive oil, vinegar, and spices right into the lunch container) = delcious and healthy salad. Great way to use up dinner leftovers without feeling like you’re repeating meals, too.

I take lunch with me to work every day as I’m not able to eat out of the cafeteria (I’m getting sick of the food) ..I always take: fruits (at the moment: 1banana, 1apple, 1 peach and a 1 kiwi), plain yoghurt (I add one of the fruits into it). But that is more for breakfast, as I don’t have time to eat it at home. For lunch I sometimes take leftovers with me or I pack baby carotts or a small tomato-mozzarella salad with a slice home made bread, or cottage cheese is also good alternative. I like it if it is not to complicated and this satisfy me until I get home to cook dinner. Maybe this helps!!
